Al menos una vez a la semana, para el desayuno tenemos avena cocida con leche y especias, frutas y frutos secos. A mis hijas les encanta, pero a veces dejan un poco y sería un crimen que se fuera el alimento a la basura.
Hace poco preparé avena con leche, vainilla, azúcar rubia y un poco de canela. Mala elección porque a mis monas no les gustó mucho la canela y dejaron bastante en sus platos. Así que, agarre los sobrantes y me ajusté a algunas medidas para llegar a este delicioso BUDÍN de avena, crocante por fuera y suave por dentro:
Para un molde de pan rectangular:
-2 tazas de avena
-3 tazas de leche (la que sea de tu preferencia)
-1 taza de azúcar rubia
-esencia de vainilla a gusto
-canela a gusto
-nueces picadas
-1/2 taza de arándanos congelados
-3 huevos
-1/3 taza de azúcar y 1/3 taza de agua para el caramelo
Poner en la juguera todos los ingredientes excepto las nueces y arándanos y licuar. Agregar las nueces y los arándanos y mezclar con una cuchara. Reservar.
Hacer un caramelo (1/3 taza azúcar + 1/3 taza de agua) en un sartén, dejando los ingredientes ebullir hasta que se vea tostadito y luego verterlo sobre el molde. Agregar la mezcla y llevar a horno 180 grados hasta que se vea dorado.
Queda delicioso y si reemplazas los 3 huevos por 2 plátanos bien maduros queda un postre o merienda vegana exquisita.

At least once a week, we have cooked oat as breakfast with milk and spices, fruits and dry fruits. My daughters love it, but sometimes they eat just a little and I can’t put it into the garbage.
Not long ago, I cooked oat with milk, vanilla, blond sugar and cinnamon. It wasn’t´t the best choice because my girls didn’t like that. So, I took it and I prepared a delicious oat budin, crunchy in the cover and soft inside.
You need a rectangle mold:
-2 cups oat
-3 cups milk (you can use vegetarian milk)
-1 cup blond sugar
-vanilla extract
-ground cinnamon
-nuts, chopped
-1/2 cup frozen blueberries
-3 eggs
-1/3 cup de blond sugar and 1/3 cup water (caramel)
Put all ingredients in a blender (except nuts) and blend. Add nuts and blueberries and mix with a spoon. Reserve.
Make caramel: put sugar and water in a little cooking pot over medium heat until caramel is formed. Don´t mix. Put caramel into the mold and fill the mold with blender mix and bake in a preheated oven at 180ºC (350ºF) for 20 minutes, until it´s firm to touch and golden.
It´s delicious and you can replace eggs with 2 bananas and you have an amazing vegan dessert or snack.
